Description

Ingredient

For 1-2 person
Cooking time: 30 minutes

1. 3 Chicken hips
2. 3 Shallots
3. 5 Goat peppers
4. 8 cloves Garlic
5. 2 Tsp. Cumin powder
6. 1/2 Tsp. Fennel
7. 1/2 Tsp. Coriander seeds 
8. 1/4 Tsp. cinnamon 
9. 1 Tsp. Shrimp paste
10. 1 Ginger
11. 2 Tbsp. Tamarind juice
12. 1 cup Coconut milk






How to (click)

1. Cut chicken, stab into stick and set aside.
2. Pound ingredients 2-10 until finely. Mix with coconut milk and marinate for 30 minutes. Then grill over medium heat for 15 minutes until thoroughly cook.

Ingredient

1. 1 cup Fish
2. 10 Fennel leaves
3. 2 cups of Coconut milk
4. 1/2 cup of Dried chili
5. 2 Tbsp. Minced ginger
6. 1 Tbsp. Lemongrass
7. 10 cloves Garlic
8. 2 Tsp. Turmeric
9. 5 Chilies
10. 2 Tsp. Shrimp pate                                      
11. 1 Tbsp. Shallot
12. 1-2 Tbsp. Fish sauce
13. 1 Tsp. Palm sugar








How to (click)

1. Pound dried chili, chopped lemongrass , galangal , turmeric, bird chili, shrimp paste, shallot until finely and set aside. 
2. Heat the pot, add curry paste and stir-fry until dissolve. Follow by fish (do not stir until cooked). Season with fish sauce, sugar (optional). Then add fennel leaves and stir a bit until combine. Ready to serve.

Fried Shrimp with Fern Leaves (Goong Tod Bai Leb Krut) - Fried Shrimp with Fern Leaves is another of southern fried food. We fried prawns or shrimps with fern leaves. Because this leaves look like Garuda nail. You can serve this dish with steamed rice or as an appetizer as well.

Ingredient

For 1-3 person
Cooking time: 20 minutes

1. 2 cups of Fern leaves
2.1 Tbsp. Fried dough
3. 3 Tbsp. Small shrimp
4.1 Egg
5. 1 cup of Coconut milk
6. 1/2 Tbsp. Soy sauce                                                              
7. 1 Tsp. Sugar
8. 7 Dried chilies
9. 1/2 Tsp. Black pepper
10. 1 Tbsp. Chopped lemon grass

How to (click)

1. Pound curry paste, dried chili, black pepper, chopped lemongrass, galangal, turmeric, minced garlic and grilled shrimp paste until finely. Set aside.
2. Mix flour with coconut milk. Then add small shrimps. Put egg, coconut milk, soy sauce, sugar and curry paste.
3. Fry fern leaves in a pan. Add oil and fry over medium-high heat until crispy and ready to serve.
